Kojiya Sanzaemon White Koji [Sour] 500g

500g of white koji that was flash-frozen immediately after production to preserve its original flavor.
The biggest feature of white koji is citric acid. You can easily use this acidity to make refreshing amazake or dishes with a sour kick.

To maintain quality, we produce in small batches. If you order 2kg or more, please allow several days for your order to be processed.

Recipe examples: Make amazake and turn it into a lassi-like drink. Use it to make shoyu koji that tastes like ponzu shoyu. You can also use it to season dishes that benefit from acidity and sweetness.
Please note that this product is sour, unlike regular koji, so please be mindful when ordering.

 

How to use

Take it out of the freezer several hours before use and let it thaw naturally at room temperature. (Thawing time varies depending on the season. Use the state where the grains can be easily separated as a guide.)
